Bread making with store bought or home ground flour

My bread recipe using store bought flour(scroll down for home ground flour recipe)
Prep
You will need 2 greased loaf pans
a clean dish towel
your mixer with the dough hook attachment
Step 1
2 cups of warm water
1 Tablespoon brown sugar
1 heaping Tablespoon of bulk yeast(or 2 packets)
In a small bowl or measuring cup dissolve sugar in water and the add yeast, let sit while you do the next step
Step 2
3 cups whole wheat flour
You will need 2 greased loaf pans

1/3 cup brown sugar
2 teaspoons of salt
Put all of this in your mixer bowl, and mix on the lowest speed until everything is combined
Step 3
1/3 cup oil (Canola oil, vegetable and olive oil all will work fine)
2 cups whole wheat flour
Slowly add the water/yeast mixture from step 1 and the oil to the mixer while it is on the lowest speed. Once everything is combined, start adding the flour ½ cup at a time. Give a few minutes in between scoops for it to be kneaded into the dough. This is the tricky part. Sometimes it works perfectly and sometimes it is hard to get the last scoop or two to incorporate. If you have trouble, try one or both of these things- 1) adding a teaspoon of water, 2) stop the mixer and pull the dough off of the hook and flip the moist part that was on the inside to the bottom of the bowl. After everything seem to be combined, if the dough is still sticky and not making a nice ball on the hook, add another ¼ cup of flour. It shouldn’t stick to your hands when you touch it, if so, it needs more flour. It also should not have extra flour in the bottom that has not combined, if so, it needs a little more liquid. You get the point. Let the mixer keep kneading for about 5 minutes after you get the dough to the right consistency.

Olive oil or non stick spray
When your dough seem right, turn your oven on warm and let it warm up for a few minutes. You want it to feel warm inside, but not hot. Then get your dough out of the mixer and divide it in half. Form each half into a loaf shape. You may have to work with it a little, but you don’t want any seams (but this is not a big deal, just makes for a prettier loaf) . Place each loaf in a greased loaf pan and grease the top of each loaf by either rubbing it with olive oil are spraying it with non stick spray. Now put both pans in your warmed oven (make sure you turn the oven off if you have not already) and cover with a dish cloth. Depending on the weather it will take between 1-2 hrs to rise. When they looks like nice full loafs, remove dishcloth and turn oven on 350(you do not have to take the bread out while it preheats, just leave it in the whole time), set timer for 30 minutes. When it is done, remove it from the pans immediately to cool.
i also make an sweeter oatmeal bread, the only difference is in step 2 i use these ingredients.

this is the mixer i use to do my bread. there are bigger and better ones out there designed just for bread making, but i like this one because it is versatile, not huge and not overly expensive. i got it as a wedding present(8 years ago) from my flower girl's parents and i love it!!

i use stone pans like this one. they cook the bread perfectly!! when i switched to stone pans several years ago, it made a big difference in my bread.
