Zucchini!!
Every year it seem there is a veggie in the garden that really rises to the top and out does all of the other veggies. and every year it seems to be a different veggie. 2011 was the year of zucchini. these are just a few pics of all of the glorious green veggies that we picked from our garden. at one point during the month of June, we ate zucchini for every meal for over 11 meals in a row!! and, there wasn't even any complaining about it. i got to make all of my favorite zucchini recipes and try a few new ones. so enjoy the pics and check out some of the ways i put our bounty of zucchini to good use.

Creamy Zucchini Alfredo

Zucchini Muffins
so moist and yummy. i also made zucchini brownies but i didn't ever get a picture of those. i used this recipe for my muffins, except i use whole wheat all purpose flour(freshly ground) and i used 1/2 of applesauce and 1/2 cup of oil instead of the 1 cup of oil: http://allrecipes.com/recipe/sophies-zucchini-bread/detail.aspx
Grilled zucchini (and squash)
i cut the zucchini long ways in 1/4 inch slices(i used my mandolin slicer) and then just brushed them with olive oil and sprinkled with salt and pepper. james did the rest of the work out on the grill. we really enjoyed wrapping these thick sliced grill veggies around our cheese burgers and using them as a bun. it is a little messy, but super yummy and very low in carbs!!Roasted zucchini
this is a delish was to eat any kind of veggie! these are great to eat on there own, to put in an omelet or my favorite, roasted veggie lasagna!! i like to do red peppers, zucchini & purple onions and layer then in a meatless lasagna. preheat oven to 400 degrees F, slice your veggies and arrange in a single layer on cookie sheets, brush with olive oil and sprinkle with salt & pepper. then bake at 400 for 15 minute, flip and bake for an additional 5 minutes. remove veggies that are done(browned on edges and tender) and return rest to over until done. roasted really brings out the flavors in veggies. layer these with cottage cheese, mozzarella, meatless spaghetti sauce and lasagna noodles and you will not be sorry!!
this was a new recipe i tried this year and we really loved it. it made a great dinner and then we ate the left overs for breakfast. i used bacon instead of ham and tomatoes instead of mushrooms. i also increased all the veggies a little and decreased the bread because we have been trying to eat less carbs. http://allrecipes.com/recipe/brunch-strata/detail.aspx
Zucchini Crab Cakes
this is a family and company favorite. it isn't summer around here with out Zucchini Crab Cakes :) they must be dipped in homemade roumalade sauce to be enjoyed to the fullest. i think i am going to do a full blog post soon on these babies, along with my roumalade sauce recipe. so, stay tuned!!
